Recipe of the week: Homemade Seitan (vegan meat)

Oh yes, I have been craving for something. Again, ha ha, as always.
So, this time, I decided to go crazy and really make my own meat. Yes, it is possible and it DOES taste good!!
This recipe is from a cookbook "Vegan with a vengeance" by Isa Chandra Moskowitz. I also found very similar recipe from author's homepage.
I used the book version, so I can't judge how does internet version taste like.

Ingredients:
2 cups vital wheat gluten flour
1/4 cup nutritional yeast
2 tbsp all-purpose flour
1 cup cold water or vegetable broth
1/2 cup soy sauce
1 tbsp tomato paste
1 tbsp olive oil
2 garlic cloves, pressed
1 tsp finely grated lemon zest

For Broth:
12 cups water or vegetable broth
1/2 cup soy sauce

Process:
In one bowl mix all dry ingredients (except lemon zest) together. In the other bowl mix all wet ingredients along with lemon zest.
Pour the wet ingredient mixture in to the dry one and mix them very well for about 5 min (I used my hands because mixture becomes very spongy). Let the dough rest for few minutes. Meanwhile, mix broth ingredients in a large saucepan. It has to be very cold.
Roll the dough in a log shape and cut it in 6 equal pieces. Then put these pieces into cold broth and start to boil it for about an hour. If you will put the dough into hot water then dough will fall apart! After 1 hour of boiling, let the dough sit in the broth until it cools down completely. Then take dough balls out of the broth and cut them into bite size pieces. If you want to store it for later then put it into sealable container along with the broth (for keeping the dough moist).
